SUPERPRAWN SALAD

The 'Fish Box' Flannery's Seafood Bar in Dingle would like to thank everyone for feedback and support through the past few weeks.

Youíve asked for it, so here it is! Their SUPER PRAWN SALAD recipe. Such a quick, tasty and easy Dish to make

For the salad:
180g Iceberg lettuce, sliced
2 tsp of chives (finely chopped)
5 cherry tomatoes, cut into quarters
1 ripe Avocado, destoned and sliced
75g Sliced Spring Onion
1/2 red onion, finely diced
Most Importantly 200g of Irish Prawns

For the Sauce..
4 tbsp of mayonnaise
6 tbsp of ketchup
2 pinches of paprika
1 tsp of brandy (optional)
1 lemon, zest and juice.
1 tsp of Chives

METHOD:
1) Fill a saucepan of water and turn on your hob to medium to high heat. When your water begins to boil. Add in your prawns and gently stir to make sure they're not stuck together! When the water begins to boil again, turn off the hob, drain your saucepan and run cold water through the prawns before draining one last time.
2) Prepare your Salad, wash & chop your Salad Veggies, add to a bowl and mix. (Keep some avocado & tomatoes for the end)
3) Sauce: Add all ingredients to a bowl and stir until youíre happy and have a consistent mix.
4) Dress your plate: Add those cherry tomatoes and avocado youíve saved to the plate, along with your mixed salad. Now itís time to add your Prawns and Sauce how you like!
